Cinnamon Essential-Oil-Loaded Fish Gelatin–Cellulose Nanocrystal Films Prepared under Acidic Conditions

The aim of this study was to characterize films obtained from fish gelatin (GelA, 3% w/w), encapsulated with cinnamon essential oil (CEO, 0.03–0.48% v/w), and loaded bacterial cellulose nanocrystals (BCNCs, 0.06% w/w) at pH = 3.5. CEO-GelA/BCNC were prepared by casting, thickness, light transmittance (TT) haze (H), surface hydrophobicity, tensile properties, chemical composition, water solubility (WS) thereof assessed. All displayed outstanding optical properties (TT > 89.4%), slightly exceeding a value only the highest CEO loading within nanoemulsion formulation. plasticizing effect increased elongation break (EAB, 0.84% up 3.79%) decreased strength (TS, 8.98 MPa down 1.93 MPa). FT-IR spectra revealed good interaction among components via hydrogen bonding. hydrophobic nature negatively impacted WS (from 52.08% 8.48%) films. results work confirmed possibility producing packaging systems renewable sources be potentially used in form edible films/coatings for preservation water-sensitive food products, both vegan-based (fruits/vegetables) animal-based (meat/seafood).
